A Response!

The Publican has responded to my inquiry!

Thank you so much for contacting us--we look forward to having you with us for your birthday!

As for the tasting menu, the only day of the week that we do offer a pre-set menu is on Sunday evening. My recommendation as to how to closely replicate a similar experience would be to let your server guide you through a "culinary journey" if you will! When you arrive, you and your wife should look over the menu and select a small handful of items that most interest you from the menu, and from there allow your server to course the items out in a progression that will flatter each one of the dishes, as well as your palette!

As for the beverages, that is ultimately going to be contingent upon your menu selection, although service staff is quite knowledgable about the beverage menu and will be happy to provide pairings for you.

Adventures in Pork Vol. 1: Birthday Feast

We are going to The Publican for my birthday. I am excited. Here is an e-mail I just sent them:

Hello,
My wife and I will be celebrating my birthday at the Publican on Friday June 19th. I'm very excited. You see, I like pork...a lot. As well, as everything else on your menu. I've been looking forward to going to the restaurant since I heard rumors about it's conception. So, in the interest of maximizing my experience I have a question: I see there is no tasting menu, so what would be the best way to replicate this experience including beer sampling? I'm sure the waitstaff is quite knowledgeable, but I thought it worth asking ahead of time to see if there is any sort of chef-guided course I could take in creating an epic birthday feast. Thanks for humoring me.
